Deep Dark Mint Chocolate Cookies

This is a yummy cookie recipe that I came up with last year.  I loved them so much that I made them again for my Christmas goodie boxes 😮


~3/4 cup  (1 1/2 sticks) butter or margarine, softened (I used the unsalted butter)

~3/4 cup sugar

~1/2 cup brown sugar (doesn’t matter light or dark)

~1 teaspoon vanilla

~1/2 teaspoon mint extract

~2 eggs

~1 3/4 cup all-purpose flour

~1/2 cup cocoa powder (I use Hershey’s)

~3/4 teaspoon baking soda

~1/2 teaspoon baking powder

~1/4 teaspoon salt (optional)

~1 cup chocolate chips (optional)


*preheat oven to 375*

*mix butter, sugars, extracts in large bowl until smooth

*add egg on at a time and mix well after each one

*in another bowl sift flour, cocoa, baking soda, baking powder and salt

*slowly add the dry mix to the butter mixture

*then  add the chocolate chips

(this might be weird but smell your batter, if you just get a hit of mint your good to go but if you want a stronger mint flavor then add another 1/2 teaspoon)

*place by heaping teaspoons on to an ungreased cookie sheet

*bake for 7 minutes, let cool on pan for about a minute, then move cookies to cooling rack to cool completely.

These are so yummy and you can change this recipe any way you like, don’t add the mint and use a different flavor.  Or use a liquor instead.  I am going to try this with using an Irish Creme liquor next time.
