Pumpkin Muffins


Yep it’s October!  Pumpkins, orange, spiders, black, candies, spices……so many yummy and fun things come along with this month.  For me this month is crazy 2 birthdays, a hubby deploying and Halloween.  The girls asked if they could bring a snack to share with Children’s church (we will also be sharing with classrooms).  My family loves going to North Pole Worship Center and I thought that would be a great idea.  So now what to make for them….pumpkin muffins. 


2 cups flour

2 tsp baking powder

1/4 tsp baking soda

1/2 tsp cloves

1/2 tsp nutmeg

2 tsp cinnamon

1/2 tsp all spice

1/2 stick butter

1/2 cup apple sause

2 eggs

1/4 cup butter milk*

1/2 cup sugar

1/4 cup packed brown sugar

1/2 tsp vanilla

3/4 cup puree canned pumpkin

~ preheat oven to *400 and line muffin pan ( I used a mini muffin pan unlined but sprayed lightly with cooking spray)

~ in medium bowl mix all dry ingredients

~ in another bowl mix butter and sugars

~ add eggs mixing after each one

~ then add vanilla and pumpkin

~ slowly add dry mix to wet mix ( i know sounds kind odd)

~then add buttermilk to mixture

~add batter (will seem a bit thick but thats okay they don’t turn out that way) to muffin liners/pan.  fill about 3/4 of the way full

~bake for about 20 mins if using full size muffin pan, 10 mins if using mini muffin pan

~can serve warm w/butter or eat cooled. 


These went over really well for me having to make up this as I went last night.  (please adjust spices to your liking if need be, can add less or more depending on what you like) My kiddos really like it.  I have been asked by them about making more already.


*if you don’t have butter milk, you can add a tablespoon vinegar to a cup of milk and let sit for 5 mins and use.  It is basically the same
