Yummy Zucchini Bread

I love going to the Farmers Marker. We have a really good one here. It has a vender who has awesome Zucchini. I have always wanted to make it but never had, so I went ahead and got the yummy veggie.

Here’s the recipe that I used:
3 cups flour
1 tsp salt (optional)
1 tsp baking soda
1 tsp baking powder
1 1/2 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp ground all spice
1/2 tsp pumpkin spice
3 eggs
1 cup vegetable oil
1 1/2 cup sugar
1 cup brown sugar
2 1/2 tsp vanilla
1/2 tsp almond extract
2 cups grated zucchini ( don’t drain)
1 cup chopped walnuts ( optional)

-grease & flour 2 bread pans. Preheat oven to 325 degrees
-sift flour, baking powder, soda, and spices together
-beat eggs, oil, extracts and sugar together
-add dry ingredients ( mixture will seem dry) then stir in zucchini and nuts
– bake for 60 mins or until toothpick comes out clean
-cool in pans for 10 min and then remove from pans and let finish cooling completely

This recipe is one I came up with after reading dozens of others. This one works really well. My kids love this bread (rarely lasts longer than a few days)

I am working on a chocolate version of this recipe.
