Homemade taco shells

A  few weeks ago my kids wanted tacos for dinner.  We had everything but the shells.  I really didn’t want to but all 4 kids in the car and lug them over to the store just for shells.(they like the soft ones)  So I hopped on the internet and found a really easy recipe.

1/2 cup flour

1/2 cup corn meal

4 eggs

1 cup water

1/2 tsp salt (optional)

Mix all ingredients well.  (will be runny)

heat small skillet and pour just enough batter to cover the bottom of the pan.  (the thinner the better)

cook for about 2mins then flip, cook for about 2 mins on this side.

then place on paper towel.

repeat until all batter is used

My family loved these, and the great part is they don’t fall apart no matter how much they are stuffed.   We had tacos again the other night but I bought the flour shells, yeah needless to say I am no longer buying the shells

Enjoy
